Recipe for rice with lemon and parsley

  • 1 cup of long grain white rice
  • 1 1/2 cups of water or vegetable broth
  • 1 large lemon
  • 2 tbsp finely chopped fresh parsley
  • 1 clove of chopped garlic
  • 2 tbsp finely chopped white onion
  • 1 tbsp of olive oil
  • 1/2 teaspoon of salt
  • 1/4 tsp black pepper
  • 1/4 tsp lemon zest
Method · 30 min
  1. Wash the rice under running water until the water runs almost clear. Drain it well.
  2. Heat the olive oil in a pot over medium heat and sauté the onion for 2 minutes.
  3. Add the garlic and cook for 30 seconds, making sure it doesn't burn.
  4. Add the rice and sauté for 1 or 2 minutes, stirring so that it absorbs the flavors.
  5. Add the water or broth, salt, and pepper. Mix only once.
  6. Bring to a boil over medium-high heat. Once it starts boiling, reduce the heat to low and cover the pot.
  7. Cook for 15 minutes without uncovering or stirring the rice.
  8. Turn off the heat and let the rice rest covered for 5 minutes.
  9. Uncover and add the juice of half a lemon, the zest, and the fresh parsley.
  10. Gently mix with a fork, taste and adjust the lemon, salt or pepper before serving.
