Lightly stuffed courgettes

  • 400g Minced Beef, 5% Fat
  • 200 g Basmati Rice
  • 1 Onion(s)
  • 1 clove of garlic
  • 200g Tomato Coulis
  • 30 g Parmesan
  • 2 tbsp olive oil
  • 2 sprigs of thyme
  • 8 Basil leaves
  • 4 brin(s) Persil
  • 1 pinch(s) of salt
  • 1 pinch(s) of pepper

  1. Preheat your oven to 200°C (400°F). Wash the zucchini and cut them in half lengthwise. Using a spoon, scoop out the flesh from each half and set it aside. Peel the onions and garlic. Slice the onions and mince the garlic. Set aside.
  2. In a pan, sauté the zucchini flesh in olive oil with the sliced ​​onions and garlic, stirring occasionally. Add the ground beef and cook, stirring again. Sprinkle with thyme and chopped basil, and season with salt and pepper. The stuffing is ready.
  3. Fill the zucchini halves with the stuffing and arrange them in an ovenproof dish. Pour the tomato sauce over the zucchini. Bake for 40 minutes.
  4. A few minutes before your stuffed zucchini are done, sprinkle with Parmesan cheese and return the dish to the oven under the broiler for a few more minutes. Meanwhile, bring a large pot of water to a boil. Cook the rice for 8 to 10 minutes according to the package directions. Serve the stuffed zucchini with the rice and garnish with sprigs of parsley.
