  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp chili powder
  • 1 bunch of fresh parsley
  • 100g Grated cheese

  1. Start by gathering all the ingredients on your work surface to cook more calmly and save time. Peel the onions and garlic, then slice the onions and finely chop the garlic. Wash the red bell pepper, remove the seeds and white membranes, then dice it. Clean the button mushrooms with a clean cloth or slightly damp paper towel, then slice them. Chop the fresh parsley. Finally, cut the Morteau sausages into thick slices so they hold their shape during cooking.
  2. Bring a large pot of salted water to a boil. Once boiling, add the pasta and cook according to the package directions until al dente. Stir once or twice at the beginning to prevent sticking. Meanwhile, prepare the topping. Before draining the pasta, reserve a small ladleful of the cooking water; this will help thicken the sauce if needed.

Let it heat for another one to two minutes so the flavors meld together. If you prefer a softer texture, gradually stir in some of the reserved pasta water. Finish by adding some of the chopped parsley for freshness and a touch of herbaceousness that balances the flavors.
  7. Divide the piping hot pasta among four bowls or a large, inviting serving platter. Sprinkle generously with grated cheese for a rich, slightly melty touch. Add the remaining fresh parsley just before serving to preserve its vibrant color and aroma.
