Green bean and cherry tomato salad made in a Thermomix

Perfect for summer to bring a touch of freshness to your table, this green bean salad, prepared with the help of the Thermomix, is very tasty thanks to the addition of bacon and cherry tomatoes.

Ingredients · Servings 4
  • Water - 500 grams
  • Green beans - 400 grams
  • Salt - 2 pinches
  • Red cherry tomatoes - 300 grams
  • White onion - 1
  • Fresh parsley - 4 sprigs
  • Bacon bits - 100 grams
  • Olive oil - 15 grams
  • White balsamic vinegar - 10 grams
  • Mild mustard - 0.5 teaspoon
  • Salt - 0.75 teaspoon
  • Pepper - 0.25 teaspoon
Method · 41 min
  1. Put 500 grams of water in the Thermomix bowl.
  2. Add the Varoma.
  3. Place 400 grams of green beans in the Varoma in the Thermomix bowl.
  4. Add 2 pinches of salt (adjust according to taste) to the beans in the Thermomix bowl.
  5. Cook for 22 min/Varoma/speed 1.
  6. Place 300 grams of quartered red cherry tomatoes in a salad bowl in the Thermomix bowl.
  7. Add the cooked beans to the salad bowl and empty the Thermomix bowl.
  8. Add 1 peeled and halved white onion to the Thermomix bowl.
  9. Add 4 sprigs of fresh parsley (leaves only) to the Thermomix bowl.
  10. Mix for 5 seconds/speed 6.
  11. Scrape the sides of the bowl with the spatula.
  12. Add 100 grams of bacon to the Thermomix bowl.
  13. Add 15 grams of olive oil to the Thermomix bowl.
  14. Sauté for 4 min/120°C/speed 1.
  15. Add 10 grams of white balsamic vinegar to the Thermomix bowl.
  16. Add ½ teaspoon of mild mustard to the Thermomix bowl.
  17. Add ¾ teaspoon of salt to the Thermomix bowl.
  18. Add ¼ teaspoon of pepper to the Thermomix bowl.
  19. Mix for 10 seconds/speed 2.
  20. Pour the vinaigrette over the salad and then mix.
  21. Serve cold.

Put 500 grams of water in the Thermomix.

Place 400 grams of green beans in the Varoma.

Add 2 pinches of salt (adjust according to taste) to the beans and cook for 22 minutes / Varoma / speed 1.

Place 300 grams of quartered red cherry tomatoes in a salad bowl.

Add 1 peeled and halved white onion and 4 sprigs of fresh parsley (leaves only) to the Thermomix. Mix for 5 seconds / speed 6. Then scrape down the sides of the bowl with the spatula.

Add 100 grams of bacon and 15 grams of olive oil to the Thermomix. Sauté for 4 minutes / 120°C / speed 1.

Add 10 grams of white balsamic vinegar, ½ teaspoon of mild mustard, ¾ teaspoon of salt and ¼ teaspoon of pepper to the Thermomix. Mix for 10 seconds / speed 2.

This salad is excellent. – I followed the advice of some fellow cooks and cooked the bacon separately to reduce the fat. – Added to the bowl while continuing with the recipe, it's perfect. – I also added three hard-boiled eggs, again following the advice.

No white onion, so I opted for a raw red one. A hard-boiled egg on top. Thank you @Giulia for sharing this, we loved it. And yet I wasn't a fan of green beans in salads. One less to worry about .

No bacon, I added feta. No onion, but pressed garlic, fresh basil to replace the parsley, and honey mustard/balsamic vinegar. Black balsamic vinegar, I was out of white. I think it's going to disappear in a flash and there won't be a crumb left... A drop? Anyway, we're going to devour it all!

I added a red onion (I prefer them for salads because I find them milder), a piece of Cantal cheese, which was left in the fridge, cut into cubes, and eggs that I cooked in the steamer basket at the same time as the beans.

I'm always on the lookout for green bean recipes because, while we love vegetables at MaPicardie, we have to admit that green beans … We adore "Italian-style beans"... and this little salad recipe... pure bliss! With a small barbecue last night... delicious... It will be a regular on the menu, weather permitting .
