Swiss Barley Salad

- vegetable oil – 1 tbsp.
- medium fresh cucumber – 1 pc.
- barley - 1 cup
- mixed salad leaves – 200 g
- pork fillet – 500 g
- green onions – 1 bunch
- orange (juice) – 0.25 cups
- sweet mustard – 1 tbsp.
- vegetable oil – 0.25 cups
- garlic – 1 clove
- salt – to taste
- curry powder – 1 tsp.
- Rinse the pearl barley, drain it in a sieve, and place it over a pan of boiling water. Cook over medium heat, covered, for 20 minutes. Pour 4 cups of water into a large saucepan, bring to a boil, add a pinch of salt, and the steamed pearl barley. Bring to a boil, reduce the heat, and simmer for 20 minutes. Drain the barley in a colander and let it cool completely.
- Peel and mince the garlic. Mix together the oil, orange juice, mustard, curry, and garlic. Coarsely chop the pork, rub with salt, and coat all sides with the prepared sauce.
- Brown the meat in a preheated skillet for 4 minutes per side. Reduce heat and cook, covered, turning halfway through, for 8 minutes. Keep warm.
- Chop the green onions and cut the cucumber into strips. Tear the lettuce leaves coarsely by hand. Cut the warm pork into small pieces. Combine the pork, pearl barley, lettuce, green onions, cucumber, and remaining sauce in a bowl. Season with salt to taste.
