Semolina with milk - Pilar Hernández's Chilean Kitchen

Semolina pudding with caramel is one of those traditional Chilean desserts that our mothers used to make when they had fresh milk and needed to use it before it spoiled. It's an everyday dessert, simple to prepare and delicious.

Ingredients · Servings 8
  • 1 cup (200 grams) of sugar
  • 1/4 cup of water
  • 5 cups of whole milk
  • 1 tablespoon of vanilla extract
  • 1/2 cup (100 grams) of granulated sugar or to taste
  • 1 cup (180 grams) of semolina
Method · 45 min
  1. Choose a 23cm round mold or 8 half-cup ramekins; you can use an oblong cake tin.
  2. Make the caramel. In a small saucepan, place the sugar and enough water to moisten all the sugar. Cook over medium-high heat, stirring until all the sugar dissolves.
  3. Continue cooking, without stirring, until it starts to change color, turn the heat down to the lowest setting and keep an eye on the pot; as soon as it turns the color of tea, remove it from the heat.
  4. Pour the mixture into the mold where you'll be placing the semolina. Move the mold around so the caramel coats the entire bottom. Don't worry if it hardens. And be careful, as metal molds get hot with the caramel; I have a cloth or pot holder handy.
  5. For the semolina: In a medium saucepan, place the milk, sugar, and vanilla. Cook over medium-high heat, stirring with a round balloon whisk until the sugar dissolves.
  6. Once it comes to a boil, reduce the heat to low and add the semolina in a steady stream, whisking constantly to avoid lumps. It will thicken quickly. From the moment it comes to a boil, cook for 1 more minute, stirring constantly.
  7. Pour over the caramel and let cool in the mold.
  8. Remove from the mold and refrigerate.

I like my semolina creamier. How do I make it?

This recipe is for a firm semolina that can be unmolded. If you prefer it creamier, use 1 more cup of milk and pour it into serving dishes without unmolding.
