Easy Oatmeal Cookies - Pilar Hernández's Chilean Kitchen

These are the oatmeal cookies my mom used to make. They're really easy to modify; you can use chocolate chips instead of raisins, and they always turn out delicious. They keep for at least a week in a sealed tin, staying crisp and tasty. It's an easy recipe, and they're perfect with ice cream, tea, or as a snack.

Ingredients · Servings 30
  • 100 grams of butter
  • 1 beaten egg
  • 1 cup granulated sugar (if you want them more golden like the ones in the photo, use 1/2 cup granulated sugar and 1/2 cup brown sugar)
  • 1/2 cup of walnuts and 1/2 cup of chopped raisins soaked in boiling water for 10 minutes (or chocolate chips)
  • 1 1/2 cups of globena or regular oats
  • 3/4 cup of flour
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of vanilla

  1. Beat the butter with the sugar until pale and creamy, add the vanilla and the egg and beat until incorporated.
  2. Add the flour with the baking powder.
  3. Add the oats, nuts, and raisins.
  4. Mix well to form a soft dough. Refrigerate for 30 minutes.
  5. Preheat the oven to 350F or 180C.
  6. Place 1 tablespoon of dough onto the greased tin or one covered with Silpat or parchment paper.
  7. Bake for approximately 12-14 minutes, remove when they are browning at the edges, let them rest for 5 minutes in the hot tin, then remove with the help of a dull knife to a wire rack, let cool completely before serving or storing.

How to measure flour?

Use measuring cups. The most common measurement is 1 cup = 240 ml. There are several ways to measure flour; the one I use is: Take the bag of flour out of the bag and stir it a little with a fork to loosen it. Press the measuring cup into the bag, fill it heaped, and use a knife to discard the excess flour, making the cup level. However, it's better to fill the cup by scooping flour from the bag with a large spoon and leveling it with a knife. Do not compact the flour.

Can I use instant oats in the cookies?

No, I don't recommend it; it hydrates too quickly and doesn't produce the classic texture.
