Scrambled eggs with meat - Pilar Hernández's Chilean Kitchen

A simple and very practical recipe for a Chilean "once comida" that will leave everyone happy. "Once comida" is the Chilean equivalent of dinner. It usually takes place between 7 and 9 pm when the family gets together after school and work. It always includes fresh bread, often bought on the go and still warm.

Ingredients · Servings 4
  • 450 grams of ground meat
  • 5 eggs
  • garlic, oil, salt and pepper

  1. In a medium skillet, heat a tablespoon of vegetable oil over medium heat. Add the garlic and sauté for one minute.
  2. Add the meat and cook over medium-high heat for 3 minutes, season with salt and pepper.
  3. Turn the meat over, season with salt and pepper, and cook for another 3 minutes. Using a spatula or fork, break the meat into small pieces and finish cooking for about 3 more minutes.
  4. Lower the heat to medium and add the eggs.
  5. Stir and remove from the heat before they are cooked; they will finish cooking with the heat of the pan.
  6. Serve with bread.

The secret to getting flavorful meat and browning it without moving it at the beginning of cooking, and not overcooking the eggs, is to have everything ready before you start cooking.
