Noodles with egg - Pilar Hernández's Chilean Kitchen
A classic for when you live alone, or in my case, for Friday night dinners, noodles with egg are a lifesaver when you're almost out of the fridge.
Ingredients · Servings 2
- 2 servings of cooked noodles (2 cups)
- 3 eggs
- 1 tablespoon/splash of milk, cream, or water
- 1/4 cup crispy bacon or chopped ham
- 1/4 cup grated Parmesan cheese, optional
- salt, pepper

- In a non-stick frying pan, place 1 tablespoon of vegetable oil, heat over medium heat and add the noodles. Stir occasionally and let the noodles heat through.
- Meanwhile, in a small bowl, place the eggs and all the other ingredients you plan to use, including salt and pepper. Be careful with the salt because the bacon and Parmesan cheese are already salty. Whisk with a fork to combine everything.
- Reduce the heat to medium-low and pour in the egg mixture. Using a spatula, scrape the pan and stir slowly. When the eggs are cooked and look like scrambled eggs, they're ready. Keep an eye on them and serve immediately so they don't continue cooking and become dry.
- Serve immediately.
