Cornbread with Leeks
1 packet of baking powder
- ½ cup flour, 1 egg
1 tablespoon of powdered sugar
Salt
Black pepper
Note: The amount of liquid you add may vary depending on the type and consistency of your cornmeal.
Instructions: Place a pan on the stove and heat olive oil. Add the finely chopped leeks and sauté. Once the leeks have softened and reduced in volume, add the butter. Add the red pepper flakes and stir.
In a mixing bowl, combine the cornmeal, baking powder, and all-purpose flour and stir once. Then add the egg, milk, sunflower oil, hot water, granulated sugar, salt, and black pepper, and mix well with a whisk.
Add the leek filling you prepared to the bread dough and mix. Then, spread the bread dough into a 25x35 cm rectangular glass baking dish that you have greased with butter.
Bake in a preheated oven at 180 degrees for 35-40 minutes. Slice and serve.
