Walnut Kadayıf Dessert

Ingredients for the syrup

3 glasses of water

  • Juice of ¼ lemon

Ingredients for Semolina Mortar

Ingredients for Kadayıf

  • 300 gr. fresh shredded phyllo dough
  • 250 gr. butter

Ingredients for the Filling and Topping

2 cups walnuts – crushed

For the syrup: In a saucepan, add the granulated sugar and water and stir. Once the sugar is completely dissolved, bring to a boil. Add the lemon juice and boil for a little longer, then remove from the heat.

For the semolina filling: Add the semolina, granulated sugar, and milk to a saucepan and whisk until a thick consistency is achieved. Then, transfer the prepared filling to a piping bag.

For the kadayıf: Place the shredded kadayıf strands in a mixing bowl and separate them into thin layers with your hands. Melt the butter in a pan. Pour the melted butter over the kadayıf and rub it in thoroughly with your hands.

To assemble: Place a handful of buttered shredded phyllo dough (kadayıf) in the bottom of your muffin tin and press it down using a glass that fits snugly inside. Then, squeeze in the prepared semolina mixture and sprinkle finely chopped walnuts on top. Take another handful of shredded phyllo dough and place it on top of the walnut layer, pressing it down again with the glass. Bake in a preheated oven at 200 degrees Celsius (250 degrees Fahrenheit) for 25-30 minutes. Pour the cold syrup over the hot dessert and let it soak in. Once the dessert has absorbed the syrup, invert it and arrange it on a serving plate. You can sprinkle walnuts on top before serving.
