Plantain Banana Pancakes Recipe
For this first batch, it's Afro-vegan chef Gloria Kabe who takes the reins with a stack of plantain banana pancakes, artfully topped with Alpro coconut yogurt, a dash of hibiscus syrup and lime zest… Breakfast, a big moment!

Start by preparing the hibiscus syrup: pour the water, sugar, and hibiscus flowers into a saucepan, bring to a boil, stirring regularly to dissolve the sugar, then simmer over low heat until thickened. Remove from the heat, let cool, then strain the syrup.
In a large bowl, mix the flour, baking powder, and coconut sugar. In another bowl, mash the banana with the spices, then add the Alpro coconut milk.
Mix the two preparations together, add the grapeseed oil and continue mixing until you obtain a smooth, fluid texture.
Cook the pancakes in a pan over medium heat.
Place a spoonful of Alpro yogurt on each pancake, drizzle with hibiscus syrup, add seasonal fruit and lemon zest. It's ready!
