When preparing pasta with sauce, heavy cream seems essential. However, it's not indispensable for achieving a truly creamy consistency. There's an alternative you might already have in your refrigerator that can add a wonderfully smooth texture to the dish, according to chef Michel Dumas.
How to replace cream in your pasta sauce?
You want to make a delicious pasta dish for lunch. Unfortunately, you're out of cream in your kitchen cupboards. But that doesn't mean you have to change your recipe. Chef Michel Dumas suggests using fresh cheese, which can easily provide the creamy texture you're looking for in a sauce. This ingredient has the advantage of being quite thick to begin with.
A small amount is all you need to add body to the dish. To incorporate it properly, it's best to avoid adding cold cream cheese directly to a very hot pan. It's likely to remain in small pieces. Instead, melt it gently in the sauce or mix it beforehand with a little hot liquid, which could simply be the pasta cooking water. Mascarpone can also replace cream in a pasta sauce.
Richer and thicker, it yields a particularly smooth and creamy sauce. Alternatively, you can use a mixture of milk and butter if you have both ingredients in your refrigerator. In this case, simply use 200 ml of milk and 50 ml of melted butter to replace 250 ml of cream. This combination will create a rich and delicious sauce, although the result will be slightly different from that obtained with cream.
The pasta water can be reserved. A few spoonfuls added to the sauce will make it smoother and help coat the pasta better. You can also use unsweetened condensed milk. Thicker than regular milk, it gives sauces a creamy texture without making them overpowering.
And the good news is: it can be added directly to the mixture. With all these alternatives, you have plenty of options for making your pasta and achieving a creamy sauce, even without heavy cream in the fridge.
