The trick to a super soft Paradise Roll (that doesn't break when you roll it up!)
The paradise roll is a creamy dessert, soft as a cloud, and with a delicate flavor. It's the perfect snack that will instantly win over both adults and children!
- 3 medium eggs 165 gr
- Sugar 60 g
- Flour 00 60 gr
- Baking powder 1 teaspoon
- Fresh cream 200 gr
- Condensed milk 70 g
- Honey 20 gr
- Start by preparing the sponge cake, so it has plenty of time to cool. Carefully separate the egg yolks from the egg whites, dividing them into two large bowls (remember, the bowl for the egg whites must be thoroughly degreased!). Now, take an electric mixer and beat the egg yolks and sugar together. Mix for a few minutes until the mixture is light, fluffy, and frothy.
- At this point, combine the previously sifted flour and baking powder. Add them slowly, a little at a time, to avoid forming annoying lumps. Use a soft silicone spatula and mix with wide, very gentle movements, always working from the bottom up. The secret to a perfect dough: work the mixture slowly so as not to deflate the eggs. This is the key to ensuring a soft, elastic base!
- Get a second bowl and make sure it's perfectly clean, as are the whisks: even the slightest trace of grease will prevent the egg whites from rising properly. Beat the egg whites until stiff, working them patiently. How do you know if they're ready? Do the bowl test! When you tilt the bowl, the soft white cloud should remain firmly attached to the bottom, without sliding off.
- Only when the egg whites are perfectly whipped can you add them to the rest of the batter. Use a soft spatula (or a hand whisk) and fold them in very gently so as not to ruin the work you've done so far. The correct movement: proceed strictly from top to bottom. This way, you'll continue to incorporate air and the base of your paradise roll will be incredibly soft!
- Take a rectangular baking pan (ideally about 30 x 25 cm) and carefully line it with a sheet of parchment paper. Gently pour the fluffy mixture into the pan, making sure to collect it all from the bowl. A crucial step: using the spatula, smooth the surface thoroughly to achieve a uniform thickness. This will ensure perfect, even cooking throughout!
- Bake in a preheated oven at 180°C (350°F) for just 10 minutes. Be very careful: the biscuit dough must remain light and soft. If you overcook it, it will dry out and crack irreparably when you roll it up. As soon as it's baked, perform the most important step: transfer the still-warm base, with its parchment paper, onto a clean, slightly dampened cotton cloth. This foolproof trick will retain moisture within the dough, ensuring a perfect, elastic, and crack-free fold!
- Cover the surface with a second sheet of parchment paper and begin to carefully roll up the sponge cake, starting from the shortest side. Let the closed roll cool completely in this position. Why is this so important? This step allows the base to take its folded shape while it's still moist and pliable. This way, when you unroll it to fill it, it won't crack!
- It's time to prepare the filling: a sweet, white milk cream. Pour the liquid cream into a large bowl, immediately adding the condensed milk and a special touch of honey. The golden trick: make sure the cream is very cold from the refrigerator! This small but crucial tip is the secret to whipping it to perfection in just a few minutes.
- Turn on the electric mixer at maximum speed to whip up your sweet and fragrant mixture. Work the cream patiently until it becomes fluffy, firm, and perfectly compact. A little tip: keep an eye on the consistency and stop as soon as it's completely stiff. If you over-beat, the cream risks curdling and turning into butter!
- Carefully unroll the cooled sponge cake. Remove the towel and gently peel off the parchment paper. For a truly pastry-making touch: trim the edges with a sharp, smooth knife to make them straight and even for a flawless finish. Now comes the most delicious part: pour the milk cream over the base and spread it with a spatula, creating a generous and super-even layer.
- Begin rolling the cake, starting from the shortest side, carefully so as not to squash the filling. The crucial detail: make sure the roll's sealing line always faces down, touching the tray or work surface. This way, the cake's weight will keep it perfectly sealed, preventing it from unrolling and losing its beautiful cylindrical shape!
- Wrap the roll tightly in parchment paper or plastic wrap, tying the ends together like a candy. Refrigerate for at least a couple of hours. Don't skip this step: it's essential for the milk cream to firm up and ensure perfectly clean slices. Remove your paradise roll from the refrigerator about 5 minutes before serving, so the cookie dough can regain its natural softness. Finish with a generous dusting of powdered sugar, slice, and get ready to enjoy this sweet and fluffy cloud!

A paradise roll without condensed milk? Of course you can! If you don't have it in the pantry, simply whip the fresh cream with two tablespoons of powdered sugar and gently fold in 250g of mascarpone or cream cheese.
