Paradise Cake with Fragolino Sauce

- 3CUPS butter
- 1 1/4CUP Fragolino (flavored winebased drink)
- 9OZ. granulated sugar
- 5OZ. allpurpose flour
- 5OZ. potato starch
- 5OZ. powdered sugar
- 4OZ. wild strawberries
- Cornstarch
- Vanilla-flavored baking powder
- 12 egg yolks
- 4 egg whites
- Butter and flour for the pan
- Orange blossom water
- Salt

- To make paradise cake with Fragolino sauce, first whip the butter together with the powdered sugar. In a separate bowl, beat the egg yolks with 1/2 cup granulated sugar, then add tot he butter along with 1 tbsp orange blossom water.
- Whisk the egg whites with a pinch of salt, adding 3 tbsp granulated sugar at the end; combine half of the egg whites with the butter and yolk mixture, add the flour, starch, and 1 tsp baking powder, then gently fold in the remaining egg whites.
- Transfer this mixture to a greased and floured 10” Bundt cake pan, and bake for 40 minutes in a fan oven at 365°F. In a blender, blend the strawberries with 1/2 cup granulated sugar. Bring the Fragolino to the boil, then add 1 tbsp cornstarch mixed with 2 tsp butter.
- Finally, remove from the heat and add the blended strawberries. Set aside to cool and serve the sauce alongside the cake.
