For the fries:

  • 4 or 5 medium yellow-fleshed potatoes, cut into sticks
  • 15 ml (1 tbsp) of canola oil
  • Salt and pepper to taste
  • 30 ml (2 tbsp) of potato starch

For the fried shallots:

  • 125 ml (1/2 cup) finely sliced ​​dried (French) shallots
  • 30 ml (2 tbsp) all-purpose flour
  • Salt and pepper to taste

For the sauce:

  • 45 ml (3 tbsp) of butter
  • 45 ml (3 tbsp) all-purpose flour
  • 500 ml (2 cups) of beef broth
  • 5 ml (1 tsp) of Dijon mustard
  • 5 ml (1 tsp) of Worcestershire sauce
  • 5 ml (1 tsp) of maple syrup
  • 2.5 ml (1/2 tsp) chopped fresh thyme
  • 1 bay leaf
  • Pepper to taste

For the garnish:

  • 1 box of M&M Food Market breaded cheese curds (280g)
  • 80 ml (1/3 cup) of cooked and crumbled bacon

Steps

  • For the fries. Preheat the oven to 220°C (425°F).
  • In a large bowl, toss the potato sticks with the oil. Season with salt and pepper. Add the potato starch and stir to coat the sticks well.
  • Spread the sticks out on a baking sheet lined with parchment paper, without overlapping them.
  • Bake for 30 to 35 minutes, turning the fries a few times during cooking, until golden brown and crispy.
  • For the fried shallots: Meanwhile, toss the shallot slices in a bowl with the flour to coat them. Season with salt and pepper.
  • Preheat the air fryer to 180°C (350°F).
  • Oil the air fryer basket.
  • Shake off the excess flour from the shallots and place them in the basket. Cook for 7 to 8 minutes, stirring occasionally, until the shallots are crispy. Set aside.
  • For the sauce: In a small saucepan, melt the butter over medium heat. Sprinkle with flour and cook for 1 minute, stirring constantly.
  • Gradually whisk in the stock. Stir in the mustard, Worcestershire sauce, maple syrup, thyme, and bay leaf. Season with pepper. Bring to a boil, whisking constantly, then reduce heat and simmer for 3 to 4 minutes, stirring occasionally. Keep warm. Remove the bay leaf.
  • For the topping. Cook the breaded cheese curds in the air fryer according to the package directions.
  • To assemble. Divide the fries among four plates. Drizzle with sauce, then top with crispy cheese curds, bacon, and fried shallots.
