Crispy cheese fondue bites

Want to reinvent the classic fondue in a bite-sized version? These crispy cheese fondue bites make it easy! Taliah, a sheep's milk cheddar with a distinctive character, brings notes of caramel and hazelnut that make each bite particularly delicious.

Ingredients

  • 45 ml (3 tbsp) of butter
  • 60 ml (1/4 cup) all-purpose flour
  • 180 ml (3/4 cup) of milk
  • 300 g (2/3 lb) of grated Taliah cheese
  • 1 egg yolk
  • Salt and pepper to taste

For the breading:

  • 60 ml (1/4 cup) all-purpose flour
  • 4 beaten eggs
  • 250 ml (1 cup) of panko breadcrumbs
  • 125 ml (1/2 cup) plain breadcrumbs
  • 5 ml (1 tsp) of paprika

Steps

  • In a small saucepan, melt the butter over medium heat. Sprinkle with flour and cook for 1 minute, stirring constantly.
  • Gradually pour in the milk while whisking. Bring to a boil over medium heat, whisking constantly.
  • Stir in the cheese until melted. Add the egg yolk and mix well. Season with salt and pepper. Remove from heat.
  • Transfer the cheese mixture to a 20 cm (8 in) square dish lined with parchment paper. Smooth the surface. Let it cool slightly, then refrigerate for at least 2 hours, until firm.
  • Remove the preparation from the mold and then cut it into 16 squares.
  • Prepare three shallow bowls. Place the flour in the first. Beat the eggs in the second. Mix the breadcrumbs with the paprika in the third. Dredge the squares in flour, dip them in the beaten eggs, then coat them in the breadcrumb mixture. Dip the squares in the eggs again, then coat them in the breadcrumb mixture. Place them on a baking sheet.
  • Preheat the air fryer to 205°C (400°F).
  • Oil the fryer basket, then place half of the squares inside. Cook for 7 to 9 minutes, until golden brown and crispy. Repeat with the remaining squares.
  • Serve with cranberry coulis or apple jelly for a sweet and savory touch.
