Puff pastry bites with eggs, spinach and feta
Ideal for garnishing an appetizer platter or brunch table, these puff pastry bites with egg, spinach, and feta will disappear quickly. The filling, inspired by Mediterranean flavors, combines the sweetness of spinach with the salty, slightly tangy notes of feta, all enhanced with a hint of dill.
Ingredients
- 30 ml (2 tbsp) of olive oil
- 1 finely chopped onion
- 750 ml (3 cups) of coarsely chopped baby spinach
- 3 eggs
- 125 ml (1/2 cup) of crumbled feta cheese
- 15 ml (1 tbsp) chopped fresh dill
- Pepper to taste
- 1 pack of two 400g frozen square puff pastry sheets, thawed
- 1 beaten egg
- 15 ml (1 tbsp) of sesame seeds
Steps
- Preheat the oven to 205 °C (400 °F).
- In a large frying pan, heat the oil over medium heat. Cook the onion for 2 to 3 minutes.
- Add the spinach and cook for 1 to 2 minutes, until wilted.
- Add the eggs. Continue cooking for 2 to 3 minutes, stirring constantly. Remove from heat.
- Stir in the feta and dill. Season with pepper. Let it cool slightly.
- On a floured work surface, place the sheets of puff pastry. Cut each sheet into two equal strips. Spread the spinach filling down the center of each strip. Fold one side over the filling and brush with beaten egg. Fold the other side over the brushed side. Turn the strips over, seam side down.
- Cut each strip into six pieces, then place them, seam-side down, on a baking sheet lined with parchment paper. Brush the bites with beaten egg, then sprinkle with sesame seeds.
- Bake for 20 to 25 minutes, until the pastry is puffed and golden.
