Bagel bar

Treat yourself to a friendly and generous bagel bar, perfect for stress-free entertaining. Arrange freshly toasted bagels, smoked salmon, egg slices, cucumbers, red onions, pickles, and fresh dill on the table, then add two signature toppings made with Quebec eggs: a smoked salmon spread and a deviled egg-style filling, seasoned with bacon, chives, and paprika. Ingredients

  • 6 to 8 bagels of your choice, cut in half
  • 1/2 small red onion, sliced
  • 1 English cucumber, sliced ​​into rounds
  • 125 ml (1/2 cup) sliced ​​dill pickles

For the egg base:

  • 8 eggs
  • 80 ml (1/3 cup) of mayonnaise
  • 15 ml (1 tbsp) of Dijon mustard
  • 15 ml (1 tbsp) of lemon juice
  • Salt and pepper to taste

For the egg and smoked salmon filling:

  • 150 g (1/3 lb) chopped smoked salmon
  • 30 ml (2 tbsp) chopped capers
  • 30 ml (2 tbsp) chopped fresh dill

For the stuffed egg style filling:

  • 4 slices of cooked and chopped bacon
  • 30 ml (2 tbsp) of chopped fresh chives
  • 2.5 ml (1/2 tsp) of paprika

Steps

  • Place the eggs in a saucepan and cover with cold water. Bring to a boil, then cover and cook for 10 minutes over medium heat. Drain and immediately cool in very cold water. Peel the eggs, then chop them finely.
  • In a large bowl, combine the chopped eggs with the mayonnaise, Dijon mustard, and lemon juice. Season with salt and pepper. Stir until well blended.
  • Transfer half of the egg mixture to another bowl. Add the smoked salmon, capers, and dill. Stir gently.
  • In the bowl containing the remaining egg mixture, stir in the bacon and chives. Sprinkle with paprika.
  • Arrange the bagels on a large serving board. Place the egg toppings in serving bowls or directly on the board.
  • Place the red onion, cucumber and pickles around the bagels.
