  • 300g of mushrooms
  • Half an onion
  • 2 cloves of garlic
  • 175 ml of cooking cream
  • 70 ml of white wine
  • 30 ml of extra virgin olive oil
  • Ground black pepper
  • Salt to taste

  1. The first thing we'll do is clean the mushrooms as thoroughly as possible, since we don't want any dirt left when we eat them. There's no need to peel them; simply use a clean, damp cloth and gently wipe away the dirt.
  2. Next, finely chop and peel the onion, along with the sliced ​​garlic. Once the mushrooms are clean and the onion and garlic are chopped, prepare a shallow saucepan and heat 30 ml of extra virgin olive oil in it.
  3. First, add the onion and cook until translucent over medium heat. Then add the garlic and cook until it starts to brown. Next, add the chopped mushrooms. Let them cook slowly over medium-low heat.
  4. After ten minutes of cooking, we will add a splash of white wine and let it cook for a few minutes over medium heat so that the alcohol evaporates.
  5. Now remove a quarter of the mushrooms and set them aside on a separate plate. Meanwhile, add the cream to the pot and season with salt and pepper. Let it cook for fifteen minutes over low heat, stirring occasionally to prevent it from sticking to the pan.
  6. After 15 minutes, we'll blend the contents of the pot with a blender or, if we have one, a food processor. Once blended, we'll add the mushrooms we set aside and let the sauce continue cooking for another seven minutes.
  7. Once that time has passed, our delicious mushroom sauce will be ready to accompany our favorite dish. We can serve it in a jar so each person can help themselves, or directly onto a plate. If there are any leftovers, we can keep the sauce in the refrigerator for up to three days.
