  • 4 medium-sized jack mackerel (cleaned and filleted)
  • 2 cloves of garlic
  • 3 tablespoons of extra virgin olive oil
  • Juice of half a lemon
  • Salt to taste
  • Black pepper to taste
  • Fresh chopped parsley (optional)

  1. We start by checking the mackerel fillets to make sure they are clean and boneless. We pat them dry with paper towels to remove excess moisture.
  2. Season the fillets with salt and pepper on both sides, being careful not to overdo it, as the fish has its own natural flavor that we want to preserve. Set aside while we prepare the rest.
  3. Peel the garlic cloves and chop them into small pieces. You can also slice them if you prefer to find them in the dish later.
  4. In a large frying pan or griddle, heat the olive oil over medium-high heat. Add the garlic and sauté it lightly, being careful not to burn it to avoid bitter flavors.
  5. Remove the garlic and set it aside, leaving the flavored oil in the pan. This simple trick makes all the difference in the final result.
  6. We place the mackerel fillets on the griddle, skin-side down. We let them cook without moving them for about 3-4 minutes so that the skin becomes crispy.
  7. We carefully turn it over using a spatula and cook on the other side for a couple more minutes. The time will depend on the thickness of the fish.
  8. We drizzle the fillets with lemon juice right at the last minute, when they're almost done. This adds freshness and enhances the flavor of the mackerel.
