Boomerang: the sandwich that has revolutionized Pamplona

The sandwich gets a makeover with La Gowleria's new offering, a collaboration with the Navarre-based company Cocuus, Mikel Urmeneta, founder of Kukuxumusu and a cultural activist, and science communicator and writer Pere Estupinyà.

The tuna and bacon sandwich that has captivated the people of Pamplona is made with the crispy artisanal focaccia bread from Malatesta PGK pizzeria, along with a combination of Kaiku mozzarella cheese, avocado, caramelized onion, tomato, cheddar cheese, olive oil, garlic, and oregano. But what truly makes it unique is the contrast created by its two distinct halves within the boomerang-shaped sandwich. While the left side contains tuna and bacon of animal origin, representing tradition, the right side showcases innovation with plant-based tuna and bacon created using 3D bioprinting by the company Cocuus.

The 'Boomerang' sandwich, which has been entered in the 2nd Spanish Sandwich Championship, is a culinary creation that returns with the science of the future, according to Pere Estupinyà. Furthermore, it draws on a deeper meaning, as Aitor Ramos, manager of La Growlería, explains: "With Boomerang, we're not just offering a sandwich; we're proposing a reflection on the future of our food. It's an invitation to savor tradition and innovation in a single bite."

Those wishing to try it can do so exclusively at La Growlería (Calle Aoiz, 20, Pamplona, ​​31004), where they can vote for it as the best sandwich in Spain. 60% of the final score will depend on the public vote, and the remaining 40% will be decided by a jury of food journalists, chefs, foodies, and influencers who will visit establishments to evaluate the submitted entries.
