Apples fried in batter
- 6 firm apples
- freshly squeezed juice of 1 lemon
- 100 ml sweet wine (or cognac)
- vegetable oil for deep-frying
- 100 g flour
- 15 g of starch
- Milk
- 3 egg whites
- powdered sugar
- Peel the apples and cut into slices. Sprinkle with lemon juice, place on a plate, and soak in sweet wine or cognac to prevent the slices from falling apart.
- Heat the oil in a deep frying pan. While the oil is heating, mix the flour and cornstarch together. Form a mound with a well in the center, then pour in the milk and egg whites. Stir and let sit for 10 minutes.
- Dip the apples in the batter and deep-fry them individually. Place them on a paper towel to remove excess oil. Dust with powdered sugar and transfer to a plate.
This French dessert can be made with cognac or sweet wine. For the latter, use apples with a tart flavor, such as Antonovka apples.
