A simple lunch that turns everyday ingredients into something great

Sometimes the best lunches are the simplest. When we're short on time but still want something homemade and delicious, recipes that don't require long preparation or special ingredients come in handy. Chicken in red pepper sauce is one such recipe.

The base of the dish is a vegetable sauce made from red peppers, carrots, onions and garlic, which is then simmered and then blended until smooth. This creates a delicate and naturally creamy sauce, full of flavour and beautiful colour, without the need for complicated additives. Add quickly fried chicken pieces and you have a lunch that will delight the whole family.

Another advantage of the recipe is that it does not contain any complicated ingredients. Red pepper provides a pleasant sweetness, carrots add tenderness, and garlic and onion round out the flavor. If you want to enrich the sauce a little more, add a homemade spice mix, and at the end, you can stir in a spoonful of sour cream.

The dish goes great with mashed potatoes, rice, gnocchi, croquettes or pasta, and is especially nice with a big bowl of green salad. It's a simple, everyday recipe that proves that a good lunch doesn't need a lot of time or complicated procedures.

Ingredients for 4 people:

  • 4 red bell peppers (bell peppers)
  • 2 large carrots
  • 1 small onion (or spring onion)
  • 2 cloves of garlic
  • 500 g boneless, skinless chicken breasts
  • homemade spice mix (optional)
  • sun
  • lubricating oil

Procedure:

Clean and cut the peppers and onions into pieces. Fry them briefly in a little oil, then add the coarsely grated carrots and pressed garlic. Season to taste and add enough water to allow the vegetables to simmer slowly.

Meanwhile, cut the chicken breast into small cubes and season with salt.

When the vegetables are soft, transfer them to a tall bowl and blend until smooth with a stick blender.

In the same pan where we prepared the vegetables, fry the chicken cubes for about 10 minutes. Then add the prepared sauce and cook everything together for about 5 more minutes. If desired, stir in a tablespoon of sour cream at the end.

Serve with mashed potatoes and a big bowl of green salad. Bon appetit!
