Strawberry and cream tarts madame

Ingredients · Servings 6
- 12 shortcrust pastry tartlets
- 24 strawberries
- 65 g of sugar
- 65 g of liquid cream
- 180g of whole milk
- 10 g cornstarch
- 2 egg yolks
- 1 tablespoon of vanilla essence
- 250g of pastry cream
- 200g of whipping cream with 35% fat content
- 1 tablespoon of powdered sugar
- 3 tablespoons of strawberry jam
- 1 tablespoon of water
Method · 35 min
- You can make the tarts very easily by following the instructions in this recipe.
- Heat the milk, cream, half the sugar and vanilla essence in a saucepan.
- Put the other half of the sugar, the egg yolks and the cornstarch in a bowl and mix well.
- Pour the contents of the saucepan into the bowl. Stir well, then pour it back into the saucepan and place it over heat. Stir until thickened.
- Remove from the heat, put it in a bowl, cover it with plastic wrap and let it cool.
- Whip the cream in a cold bowl using a whisk or an electric mixer. Add the tablespoon of icing sugar when it is almost whipped.
- Once whipped, pour it in three batches into the bowl of pastry cream and stir gently each time until it is completely mixed.
- Wash the strawberries carefully. Cut off the stem and slice them in half.
- Put the madame cream in a piping bag fitted with a large round nozzle. Pipe small mounds of cream, the same height as the strawberries, onto each tartlet.
- Arrange the strawberries as you see in the photo.
- I like to give strawberries a little shine by brushing them with a bit of jam. For a better result, I mix the jam with 1 tablespoon of water and heat the mixture for a few seconds in the microwave. Then, I strain it, and I have a very fine shine: it looks great!
- If you prefer, instead of brushing them you can sprinkle them with a little icing sugar using a sieve.
