Potato and vegetable pie

This potato and vegetable pie is absolutely magnificent. Today I filled it with some wonderful vegetables, but if I add some minced meat, I'll have both the first and second courses sorted with very little effort.

Ingredients
  • 1 zucchini
  • 1 leek
  • ½ red bell pepper
  • ½ green pepper
  • 1 small onion
  • 1 large ripe tomato
  • A pinch of salt
  • 1 tablespoon of sugar
  • 2 tablespoons of extra virgin olive oil
  • 1 teaspoon of flour
  • 100 g of milk
  • 5 medium potatoes
  • 1 egg
  • 100g of cheese of your choice (—I used a mixture of Manchego and grated mozzarella—)
  • A pinch of salt
Method · 1 h
  1. Peel the tomato and dice it.
  2. Cut the vegetables into pieces.
  3. Put the extra virgin olive oil in a frying pan. When it's hot, fry the vegetables slowly. Don't forget the salt and sugar.
  4. Once the vegetables are cooked, push them to one side of the pan. Add the teaspoon of flour to the clean part of the pan and stir it briefly to toast it. Add the milk and stir again. Once thickened, mix it with the vegetables, stirring them evenly throughout the pan. Let it simmer for a couple of minutes. You'll have creamy vegetables. Remove the pan from the heat.
  5. Wash the potatoes and boil them in their skins. The cooking time depends on the type of potato and where you cook them. I use a pressure cooker and they're ready in 10 minutes.
  6. Peel them and put them in a bowl. Add a little salt and mash them with a fork.
  7. Add a slightly beaten egg and mix.
  8. Add the cheese and stir.
  9. Have the oven preheated to 200ºC, top and bottom heat.
  10. Grease a baking dish that's suitable for the oven. I use one that's 26 by 18 cm and 6 cm high.
  11. Spread half the mashed potatoes evenly over the base. Add the vegetables and distribute them evenly. Cover with the remaining mashed potatoes. Spreading it with a spatula will help. Make grooves in the mashed potatoes with a fork. Bake for about 25 minutes, or until the top is golden brown. Keep an eye on it and reduce the oven temperature to 180°C (350°F) if needed.
  12. Serve with your favorite side dish. I served it with sprouts and tomato, but you could use, for example, the sauce from this recipe or this other one.
