Whipped feta with roasted apricots and pistachio: the perfect spread for an aperitif!

How to roast apricots?

Ingredients · Servings 3
  • 150g of feta cheese
  • 50g of whipped fresh cheese
  • The juice of half a lemon
  • 1 teaspoon of za'atar
  • 1 teaspoon of olive oil
  • Pepper
  • Pieces of roasted apricot (see notes at the end of the recipe)
  • Some chopped pistachios
  • Olive oil
Method · 15 min
  1. We put the feta cheese, the whipped cream cheese, the lemon juice, the za'atar, the olive oil and the pepper into the blender.
  2. We blend until we obtain a completely homogeneous mixture with a light texture, similar to that of whipped cream.
  3. We serve the whipped feta in a bowl and accompany it with the roasted apricots (see the observations section), a drizzle of olive oil, and some chopped pistachios.
  4. And that's it!

You can cook them in an air fryer, as we did, following the steps in our recipe. To prepare them in the oven, place the apricots in a baking dish with the cut side up and bake them for 15 to 20 minutes at 190°C (375°F), until tender and lightly caramelized.

Can za'atar be substituted with another spice?

Yes. If you don't have za'atar, you can use herbes de Provence or thyme, although the final flavor will change slightly.

How long does this whipped feta spread keep?

Whipped feta can be kept for up to three days in the refrigerator, inside an airtight container, although it is preferable to consume it as soon as possible to enjoy all its freshness.

What can you serve with this spread?

This spreadable cream goes perfectly with toast, crackers, breadsticks or crunchy vegetables, such as carrots and cucumbers.
