Lime butter cookies with icing

These lime butter cookies with icing win you over with their citrus aroma and the delightful contrast between the crisp, crumbly texture of the dough and the fresh, slightly tangy lime glaze. These homemade cookies boast an intense and refreshing flavor, perfect when you're craving a delicate yet unique lime treat.

  • 180 g of flour
  • 100g of butter at room temperature
  • 75 g of sugar
  • The juice of half a lime (green lemon)
  • The zest of 2 limes
  • 1 pinch of salt
  • 50g of icing sugar
  • The juice of half a lime
  • The zest of half a lime

  1. We prepared all the ingredients.
  2. In a bowl, mix the butter, sugar, and lime zest until you obtain a creamy and homogeneous mixture.
  3. Add the lime juice and salt and mix until fully combined.
  4. We add the flour and mix gently until we obtain a smooth and homogeneous dough.
  5. We form the dough into a cylinder, wrap it in cling film, and roll it on the counter to even out its thickness. We let it cool in the refrigerator for about 20 minutes.
  6. Remove the film and cut the dough cylinder into slices about 5 to 7 mm thick.
  7. We placed the cookies on a baking tray lined with parchment paper, leaving a little space between them.
  8. Bake in a preheated oven at 180°C for 10-15 minutes, until the edges are lightly golden. Remove from the oven and let cool completely.
  9. To prepare the glaze, mix the powdered sugar with the lime juice. Add a little more juice gradually until you reach the desired consistency.
  10. Using a spoon, place a small amount of icing on the cooled cookies and spread it gently over the surface.
  11. We finish by adding lime zest on top before the glaze dries.
  12. We let the icing harden completely and then serve the lime cookies. And that's it!
