Piti Kebab

2 tablespoons of olive oil

  • 500 gr medium-fat ground meat

3 cups of beef broth

Salt

Money pepper

  • ½ bunch of parsley

Spread the phyllo dough, torn into large pieces by hand, into a round glass baking dish. Bake in a preheated oven at 180 degrees Celsius for approximately 30 minutes. After removing the phyllo dough from the oven, drizzle 1-2 ladlefuls of beef broth over it and set aside.

Place your pan on the stove and add the butter, melting it. Add the olive oil and minced meat and begin cooking, breaking it up as you go. Once the meat is cooked, add salt, pepper, and mahleb (ground anise) and mix. Add the peeled and boiled chickpeas and mix. Add 1 ladle of beef broth and stir.

Sprinkle the chickpea and meat mixture over the phyllo dough and bake in a preheated oven at 180 degrees Celsius for 15-20 minutes.

Place strained yogurt in the center of your kebab after it comes out of the oven. Heat olive oil in a pan. Add dried mint and red pepper flakes and drizzle over the kebab. Finally, sprinkle with finely chopped parsley and serve.
