- Put the roasted, peeled hazelnuts in a blender and let them grind into a paste.
- Add the powdered sugar, liqueur, orange juice and essence. Blend again until everything is combined into a thick, stiff paste. You can also mix by hand.
- If the mixture is dry, add a little more orange juice. This will be the marzipan for our chocolate candies.
- Grate the milk chocolate and place 170 grams of it in a water bath at no more than 55-60 degrees. It should melt, but not liquefy abruptly at higher temperatures.
- Stir constantly until the chocolate is smooth. Then add the remaining chocolate and stir until melted.
- Form balls from the marzipan and roll them in the velvety chocolate.
- Remove to a baking sheet and sprinkle each candy with crushed hazelnuts or crocan.
- Let the chocolate set and refrigerate for at least 1 hour. Then you can serve these wonderful candies or put them in paper capsules and put them in gift boxes to delight your loved ones. The perfect New Year's sweets.
