Warm mocktails with apple, rosemary and butter

Ingredients · Servings 2 s
  • 500 ml (2 cups) of old-fashioned apple juice
  • 30 ml (2 tbsp) of honey
  • 2 cinnamon sticks, 7.5 cm (3 in) long
  • 1 sprig of rosemary
  • 1 small lemon, cut into slices
  • 30 ml (2 tbsp) of salted butter (see note)
  • Whipped cream, to taste
  • Homemade or store-bought caramel, for decoration
Method · 22 min
  1. In a small saucepan, bring the apple juice, honey, cinnamon sticks, rosemary, and lemon slices to a boil. Simmer for 5 minutes. Remove from heat.
  2. Strain the apple juice mixture through a sieve placed over a large measuring cup or bowl. Compost the herbs. Return the juice to the saucepan. Whisk in the butter.
  3. Pour the mixture into two cups. Top with whipped cream and a drizzle of caramel.
