Foie gras toast with apples, Tatin style

Discover this original and delicious recipe for foie gras and apple toast, Tatin-style. Easy to make, it's ideal for elegantly starting a Christmas or holiday meal.

Ingredients · Servings 4 people
  • 8 round toast rolls or 8 slices of gingerbread
  • 8 slices of cooked or semi-cooked foie gras; allow for a 250g block
  • 2 Golden Delicious Apple Units
  • 1 tbsp sugar
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 knob of butter
  • 1 pinch of salt
Method · 15 min
  1. Peel, core, and dice the apples. Melt a knob of butter in a non-stick pan and add the diced apples, sugar, cinnamon, nutmeg, and a pinch of salt. Stir and cook over medium heat until the apples are soft (about 10 minutes). Then let the apples cool in the pan.
  2. Meanwhile, cut out the toasts using a cutter to remove the crust, also cut out the foie gras slices with the same cutter and arrange them on top of the toasts, finally add one or two teaspoons of diced apples to the circle, pressing them down firmly with the spoon, then remove the circle.
  3. Keep refrigerated until ready to eat.
  • Golden Delicious Apples (2 units)
  • Sugar 1 tbsp
  • Cinnamon 1 tsp
  • Nutmeg 1 tsp
  • Butter 1 hazelnut
  • Salt, 1 pinch
