King cake just like in a bakery
The galette des rois, just like in a bakery, is a delight with its golden-brown puff pastry and generous filling. This recipe allows you to recreate the taste and texture of a professional galette at home, perfect for celebrating Epiphany with family.

- 2 rolls of puff pastry
- 3 egg units
- 125g ground almonds
- 125g caster sugar
- 125g soft butter
- 2 drops bitter almond extract
- 2 tbsp orange blossom water or kirsch
- 1 egg yolk
- 1 tbsp milk
- 1 bean unit
Method · 15 min
- Work the butter with a fork until creamy. Add the ground almonds and sugar and mix. Add the lightly beaten eggs, almond extract, and orange blossom water (or kirsch). Whisk well. Chill for 10 minutes.
- Preheat the oven to 200°C (gas mark 7). Mix an egg yolk with the milk. Place the first circle of puff pastry on a baking sheet. Brush the edge (about 2 cm in from the edge) with the egg yolk mixture. Spread the almond cream over the puff pastry circle, leaving a 2 cm border.
- Place a bean inside, pressing it in slightly. Place the second disc of puff pastry on top. Seal the edges well to the first disc. Prick the pastry lightly with a fork to prevent it from puffing up too much during baking. Make decorative patterns on top using a knife. Brush the galette with the egg and milk mixture, applying two coats with a pastry brush.
- Chill for 30 minutes, then bake at 200°C for approximately 25 minutes.
