Filet américain (Belgian beef tartare)

Discover the secret to an authentic steak tartare! A smooth and perfectly seasoned Belgian-style beef tartare, ideal for a Sunday lunch or a successful National Day celebration.

Ingredients · Servings 2 people
  • 350g minced beef
  • 1 egg yolk
  • 1.5 tbsp Worcester sauce
  • 1.5 tbsp homemade mayonnaise
  • 1 tbsp strong mustard
  • 1 large sweet and sour gherkin
  • 1.5 tbsp capers in vinegar
  • 2 small shallots
  • 5-10 drops of Tabasco
  • 2 tbsp chopped flat-leaf parsley

Method · 20 min
  1. Cut the gherkin into cubes (more or less large, according to taste). Chop the drained capers. Finely slice the shallots.
  2. Mix the liquid ingredients, add the other ingredients and mix well. Season with salt and pepper.
  3. Serve with golden fries or, as shown here, hash browns, a salad, pickles, Worcestershire sauce, mayonnaise and Tabasco for those who want more!
