Cookies (Laura Todd's recipe)

Discover the secret behind Laura Todd's legendary cookies, renowned as the best in the world. A quick and easy recipe for ultra-soft cookies, generously packed with chocolate chips and boasting an inimitable taste.

Ingredients · Servings 6 people
  • 250g butter
  • 350 g brown caster sugar
  • 375 g flour
  • 350g dark chocolate chips
  • 1 unit Egg
  • 1 sachet of vanilla sugar
Method · 35 min
  1. Mix the brown sugar with the softened butter (be careful, it must not be melted, just soft enough to be worked with a spoon).
  2. Add the whole egg and vanilla sugar. Mix until the mixture is smooth.
  3. Prepare the chocolate chips by roughly chopping chocolate (preferably Nestlé dessert chocolate) with a large knife. It's much better than store-bought chocolate chips.
  4. Add all the chocolate chips and flour at once to the first mixture. Stop mixing as soon as both ingredients are incorporated. The mixture should remain crumbly and not clump together.
  5. Form small balls from the mixture with your hands. Place them on a baking sheet, spaced apart, and flatten them slightly.
  6. Bake in a preheated oven at 190-210°C (375-410°F) for about ten minutes. The cookies should not brown too much and should still be soft when they come out of the oven so they don't become too hard when they cool down (they should always remain fairly soft, in fact).
