Lemon syrup with mint

Ingredients for 1 person

Ingredients · Servings 1
  • 5/6 lemons (approx. 250ml juice)
  • 250 ml water
  • 200 g sugar
  • 10 g fresh mint (+ extra for garnish)
Method · 50 min
  1. Squeeze the lemons. You need about 250 ml of lemon juice.
  2. Put the lemon juice, water, and sugar in a saucepan. Add the zest of 1 lemon. Let this simmer for 45 minutes over low heat.
  3. Turn off the heat and add the mint. Let it cool completely and strain the mixture. Pour the lemon syrup into a clean, sterilized bottle.
  4. Serve the lemon syrup with some fresh mint, cold water, and a slice of lemon.
