Shrimp skewers with lime aioli

Ingredients for 6 people

Ingredients · Servings 6
  • 500 g king prawns
  • 1 red pepper
  • 1 clove of garlic
  • salty
  • juice of a lime
  • 2 egg yolks (eggs at room temperature)
  • A squeeze of lemon juice
  • 2 cloves of garlic
  • Juice and zest of 1 lime
  • 160 ml neutral oil sunflower oil
  • Pinch of salt
Method · 30 min
  1. Put the egg yolks, lemon juice, salt, and chopped garlic into a tall beaker. Add the lime juice and zest. Make sure the beaker is just slightly wider than the immersion blender. Otherwise, the mixture will not blend well, and your mayonnaise will remain too thin.
  2. Place the immersion blender in the cup and then pour in the oil. Turn on the immersion blender, but do not move the mixer. When the mixture starts to combine, gently move the immersion blender up and down. Be sure to do this slowly, otherwise you risk failure. Is the aioli still a little too thick? Then add some extra (warm) water.
  3. Soak the skewers in a bowl of water.
  4. Start by making the shrimp skewer BBQ marinade. In a bowl, mix the lime juice with the red pepper, garlic, and some salt. Add the shrimp and stir. Thread the shrimp onto the skewers.
  5. Grill the shrimp skewers (on the barbecue or in a grill pan) for about 10 minutes until they are medium rare.
  6. Serve the BBQ shrimp skewers with the lime aioli.
