Filo pastry cups with caramelized red onion, brie, and bacon
Just two more days and a fresh new year begins. But first, we’re wrapping up the current year. We’re doing that with delicious snacks, among other things, such as these filo pastry cups with red onion, brie, and bacon. Yum! But of course, also with fireworks and a nice glass of bubbly.
These filo pastry cups with red onion are easy to make. But do use fresh filo pastry. Filo pastry from the freezer is an absolute disaster. It is impossible to work with, as it tears apart with every touch. So my tip: always use fresh filo pastry. You can buy it at the Turkish supermarket. That makes things a lot easier. The caramelized onion has a slightly sweet flavor. Super tasty in combination with the salty brie and bacon. In short, a delicious snack to ring in the new year.
Ingredients for 12 pieces: 5 red onions, 1 clove of garlic, 2 tbsp brown sugar, a splash of balsamic vinegar, 2 tsp thyme, 12 sheets of fresh filo pastry (or a few large sheets), 50 g butter, 200 g brie, 10 slices of bacon, olive oil.
Here's how to make it. Preheat the oven to 180 degrees Celsius (fan-assisted).
Slice the red onions into half rings and finely chop the garlic. Put this in a pan with a splash of olive oil over low heat.
Add the brown sugar, balsamic vinegar, and thyme. Let the onions caramelize over low heat for half an hour, stirring occasionally.
Melt the butter. Brush a sheet of filo pastry with the melted butter. Place the next sheet on top. Repeat this until four sheets of filo pastry are stacked on top of each other. Cut this into four equal squares of approximately 10 x 10 cm. If you have large sheets, you can of course cut more squares from them.
Divide the cut filo pastry sheets among a muffin tin.
Divide the caramelized onion among the filo pastry cups. Cut the brie into cubes and place them in the cups. Place a slice of bacon on each cup.
Bake the filo pastry cups in the oven (180 degrees) for 12-15 minutes until golden brown.
