Onion tarte tatin

- Preheat the oven to 220 degrees Celsius.
- Melt half of the butter in a tarte tatin dish or in a pan and fry the onion rings with plenty of salt and thyme for 20 minutes over low heat, or until the onion rings are nice and soft and caramelized. Pour the vermouth over the onions and let simmer gently for another 15 minutes. I used a generous splash of balsamic vinegar instead of vermouth myself, which is also very tasty.
- Knead 150 grams of cheese with the self-rising flour, milk, mustard, and egg into a compact ball of dough and let it rest for a while. Mix the remaining Gruyère with the onions. If you used a pan, spoon the onion mixture into an oven dish.
- Roll out the dough ball into a sheet and press it firmly onto the onions. Place the tin or dish in the center of the oven. After 10 minutes, lower the temperature to 170 degrees Celsius and bake for another 15 minutes, or until the dough is cooked and nicely browned.
- Remove the onion tarte tatin from the oven and let it cool slightly before turning it out and cutting it into slices. Delicious with a small salad.
