Vegetarian pasta salad with Halloumi
Are pasta salads a favorite at your home too? Then try making this vegetarian pasta salad with orecchiette pasta and delicious sweet honey-glazed halloumi. For the pasta salad, make a tasty, quick dressing with olives, lemon juice, dill, parsley, and olive oil.

- 300 gr orechiette pasta
- 2 red onions
- 1 cucumber
- 4-5 tomatoes
- 14 grams of tongue
- 3 sprigs of parsley
- 1 citroen
- 50 + 20 g pitted black olives
- 2 tablespoons dried oregano
- 225 gram halloumi
- 4 tablespoons of honey
- olive oil
- salt and pepper
Method · 25 min
- Cook the orecchiette as directed on the packaging. Peel the red onions and cut them into thin rings. Clean the cucumber and chop it into pieces. Cut the tomatoes into slices.
- Finely chop the dill, parsley leaves, and 50 grams of olives in the chopper attachment of the immersion blender. Add 90 ml of olive oil and the juice of 1 lemon, and chop again until a smooth dressing is formed. Season to taste with salt and pepper.
- Drain the pasta through a colander, transfer to a salad bowl, and drizzle with the lemon dressing and oregano. Let cool further, then mix in the tomatoes, cucumber, remaining olives, and red onion.
- Cut the halloumi into 0.5-centimeter-thick slices. Pat them dry with a paper towel. Generously brush both sides of the halloumi with honey. Grill them in a hot grill pan. Turn them over and brush again. Place the halloumi on the salad. Serve with flatbread, if desired.
Halloumi is the ultimate cheese for grilling; it stays super firm and develops a delicious flavor through grilling.
