Savory courgette pie

  • Puff pastry 1 roll 230 gr
  • 2 courgettes
  • Fontina, provola or Emmental cheese 150 g
  • Eggs 3
  • 50g grated Parmigiano Reggiano
  • Cooking cream 40 ml
  • Spring onion 1
  • Extra virgin olive oil (EVO)

  1. Clean the spring onion and cut it into thin slices, wash the courgettes, trim the ends and cut the flesh into slices.
  2. In a non-stick pan, add the extra virgin olive oil and the spring onion and brown it. Add the courgette slices and salt, stir, cover the pan with a lid, and cook the courgettes over medium heat for 10 minutes, stirring occasionally.
  3. Meanwhile, separately, mix the eggs with the cream and parmesan.
  4. Spread the puff pastry in the baking pan with its parchment paper, prick the surface with the prongs of a fork and place a layer of cheese slices in the center of the pastry. Add the cooked zucchini, spread them out evenly to create a layer and cover with more cheese slices. Repeat with another layer of zucchini, add the egg custard, a sprinkling of Parmesan cheese and bake the savory zucchini pie in a conventional oven at 200°C for 25-30 minutes.
