Cabbage Rolls with Bulgur

Medium-sized cabbage (boiled in salted water)

  • 500 gr. lamb ribs

Ingredients for the Filling

  • 400 gr. lean ground meat

1 glass of water

Salt

2 tablespoons of sunflower oil

Salt

2 cups of hot water

Carefully separate the cabbage leaves. Put water in your pot and bring it to a boil. Add salt and blanch the cabbage leaves until slightly softened. Remove from the water and let them dry. Ingredients for the Filling: Place the ground meat in a mixing bowl. Add finely chopped onion, crushed garlic, finely chopped parsley, sunflower oil, walnuts, bulgur, tomato paste, salt, pepper, and dried basil. Begin kneading, gradually adding water while continuing to knead. Ingredients for Assembling: Place the filling inside the blanched cabbage leaves and roll them up, leaving the ends open. Place the ribs on the bottom of the rice pot. Arrange the rolled cabbage leaves on top of the ribs.

In a mixing bowl, combine tomato paste, sunflower oil, salt, pepper, red pepper flakes, and hot water. Pour the mixture over the cabbage, adding more hot water if needed to cover it. Cover with a plate and cook over high heat until boiling, then reduce heat and simmer until tender.
