Garlic Hand-Rolled Pasta

Place the flour, semolina, and salt on a work surface. Make a well in the center. Add the egg and olive oil and mix. Then, knead thoroughly until a dough forms. Wrap the prepared pasta dough in plastic wrap and let it rest for 30 minutes.

Divide the pasta dough in half. Place one half on the counter. Lightly flour it and roll it out with a rolling pin. Then, pass it through the pasta machine, first through the widest setting. Then, pass it through each setting twice to prepare your pasta dough. Sprinkle flour on the dough after each setting.

Pour water into a pot and bring it to a boil. Add plenty of salt.

After rolling out the dough, spread it on your counter. Lightly flour it and roll it up from both ends so that they meet in the middle, then slice it thinly. Finally, place the back of your knife in the center of each slice of pasta and lift upwards. The pasta should separate into strands. You can flour the rolled-out dough well on your counter, cover it, and let it rest.

Add the prepared pasta to the boiling salted water and cook.

Place your pan on the stove and heat the olive oil. Add the sliced ​​garlic and sauté lightly. Add the red pepper flakes and stir. Add the cooked pasta and mix everything together. Transfer the cooked pasta to a serving plate. When serving, sprinkle with finely chopped parsley and grated Parmesan cheese.
