Quince Dessert

Powdered pistachios

Fill a mixing bowl with water and squeeze in the juice of half a lemon. Peel the quinces and rub them with the remaining lemon juice before placing them in the water. Place the peeled quinces on the bottom of a wide, shallow pan. Cut the quinces horizontally in half and flatten the bottoms. Using a spoon, remove the seeds and add them to the pan.

Add the cloves and the halved cinnamon stick to the pot. Sprinkle powdered sugar over the quince.

Place the quince sugar in a mixing bowl. Add lukewarm water and stir until dissolved. Pour the sugary water over the quinces and cover the pot. Cook over low heat for 1 hour. Once cooled, transfer to a plate, fill the insides of the quinces with clotted cream, and sprinkle with crushed pistachios before serving.
