Prestigious bubbles for Colomba Bianca: “595 100 Mesi”
Colomba Bianca expresses and enhances the work of approximately 2,500 winemakers in the Mazara del Vallo area, in the province of Trapani: a total area of 6,900 hectares of vineyards with six winemaking and aging facilities.
This mosaic features 32 varieties, both native and international, which give life to approximately 40 labels. These labels are the fruit of the winery's constant desire for innovation and experimentation, and confirm the region's great ability to create contemporary wines.
Colomba Bianca has undertaken, among other things, the challenge of sparkling wine production using the Classic Method, as exemplified by the 595 line, with a Chardonnay-based blanc de blanc and a Nero d'Avola rosé.
The line was recently enriched with the limited edition “595 100 months on the lees”, based on Chardonnay, presented at the last Vinitaly, which expresses all the value of a long refermentation in the bottle.
Philosophy

Territory
The “595 100 Mesi” is a “high-altitude wine” and owes its name to the altitude at which the Chardonnay vines grow: 595 meters above sea level. This altitude allows for perfect ripening of the grapes, thanks to the cool air currents coming from the sea and the surrounding mountains. The “100 Mesi” designation is not just a temporal reference, but a celebration of time itself. For 100 months, the wine patiently rests on the lees, in a silent embrace that transforms each bottle into a masterpiece of complexity and finesse. The vineyards are located in a hilly area between Vita and Salemi, offering ideal conditions for viticulture: the soil is predominantly calcareous-clayey, with good drainage that favors balanced vine growth; the climate is typically Mediterranean, with mild winters and hot but breezy summers, ensuring a good temperature range between day and night, essential for developing aromas and acidity in the grapes; the east-west exposure is optimal, ensuring uniform ripening of the fruit.
