Conviviality becomes sparkling with Cartizze di Col Vetoraz
We're in the midst of summer, months that evoke the ritual of aperitivo and multiply opportunities for socializing with friends. We seek moments of lightheartedness and relaxation, but without sacrificing quality.
We're, of course, talking about the Valdobbiadene DOCG Superiore di Cartizze from Col Vetoraz, a wine that embodies all the prestige and uniqueness of its native land, expressing its profound essence combined with the values that shape the company's daily work, resulting in an unforgettable sensory experience of harmony, balance, and refined elegance. Its grapes grow on a soil of clay, marl, and sandstone, which guarantees an unusual concentration of aromas and a high salinity. Velvety and aromatic, with a subtle, elegant perlage and an intense bouquet featuring a delicate blend of flowers and ripe fruit, it comes from the finest vineyards in the eponymous area adjacent to the company's headquarters. Its small size (approximately 106 hectares) limits production to small quantities. A sparkling wine that this year has already obtained notable international recognition, such as the 90 points from James Suckling, and the 93 at the Falstaff Prosecco Trophy, while in Italy the Gold Medal at the Pramaggiore National Wine Competition.
For the occasion, we would like to suggest three delicious appetizers specially created by the Da Gigetto Restaurant in Miane (TV) for Col Vetoraz.
Superiore di Cartizze pairs well with traditional local dishes, such as sopressa, but also with more modern and refined cuisine. In this case, we were thinking partly of tradition but especially of the elegance of a beef tartar with a sphere of sweet French onion and a sweet and sour Tropea onion petal; the balsamic note of a potato tartlet with eggplant pâté; and the subtle spiciness of a squid ink bread roll with hummus. The intense aromas of flowers and yellow fruit of the Superiore di Cartizze harmonize with those of the sweet onion and counterbalance the flavor of the eggplant. The velvety, rounded palate contrasts with the sweet and sour onion, the bitterness of the eggplant, and the bitter aftertaste of the squid ink. Finally, the freshness (acidity) is magical, leaving a clean and dry palate.
