Plum quisalita, a recipe like grandma's from Oltenia
The Oltenia plum quisalita recipe is one that brings back many memories for me. As some of you already know, I grew up with my maternal grandmother, in Dolj. There I spent my childhood with my maternal grandparents and my great-grandmother, my grandmother's mother.
He died when I was only 3 months old, so I don't remember him. But I remember the stories my great-grandmother told me about him. My great-grandmother was an extraordinary woman. Kind, gentle, a very good housewife and a very wise woman. She made us the best food, told us the most beautiful stories and gave us the best advice.
This Oltenia plum quisalita is my favorite when it comes to plums. My great-grandmother used to prepare it for us every summer, when the first plums ripened. My grandmother lived a short distance from my great-grandmother. I would go to her every day and sometimes stay all day. I would often find her washing the plums and putting them in a pot.
She would put them whole, with the seeds and water on top. She would then boil them over a wood fire, without rushing. She would sit on a stool and occasionally stir the pot. She would only add sugar at the end, and for us it was always too little. We kept asking her to add more sugar, but she would always tell us it was not good. She would buy 1 kg of sugar a year and never finish it. She would use very little for pancakes or put it in her tea.
