Festive cheesecake with raspberries

For the base:

150 g melted and cooled butter

For the cream:

For the jelly and filling:

600 g frozen or fresh raspberries

This festive raspberry cheesecake is absolutely delicious. No-bake, super flavorful, sweet and sour, and perfect for any special occasion. It's the kind of dessert you can make when you don't want to mess around or when you don't want to bake a cake. No-bake desserts are everyone's favorite because they're the easiest.

They can be made without much effort and always turn out very well. When I was a child, my mother used to make us Diplomat cake for holidays for the same reason. It didn't require baking, it was easy to make and it was cheap. I especially like fruit cheesecakes because they are easy to customize and everyone eats them with pleasure. I can make them with any fruit I have available, I can change the base or add different ingredients to the composition.

A festive raspberry cheesecake is welcome for Christmas or New Year. Since it's winter, you can use frozen raspberries without any problem. You can put fresh ones only for decoration, on top. Of course, you can also opt for other fruits, if raspberries are not to your taste. The same goes for the biscuit base. You can use any type of biscuit you like, even with cream.

I opted for Petit Beurre biscuits with cocoa. They can also be plain, without cocoa. They can also be digestives, with seeds or whatever you like. If you don't mind baking, you can even make a small cake to use as a base. I prefer to use biscuits because I like the crunchy texture and because it's a faster option. I can make this dessert late at night, and the next day I just serve it.
