German plum cake, tender recipe with 1 kg of fruit

For the dough:

  • 300 g flour
  • 100 g vanilla powdered sugar
  • 150 g soft butter
  • 10 g baking powder
  • 1 or

  • 1 kg prune
  • 1 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 2 tablespoons brown sugar
  • 100 g soft butter
  • 80 g vanilla powdered sugar
  • 120 g flour
Method · 1 h 20 min
  1. Put the softened butter in a large bowl, add the vanilla icing sugar and salt, then mix well until creamy. If the sugar is not vanilla, you can add vanilla essence.
  2. Add the egg and mix until incorporated into the buttercream.
  3. Add the flour and baking powder, then gently fold everything together.
  4. After incorporating the flour, mix by hand just enough to obtain a homogeneous dough. It should be soft but not sticky.
  5. Place half of the dough in a 23 cm (9.2 in) ring pan. Spread the dough as evenly as possible on the base of the pan.
  6. Form small sticks from the remaining dough and place them on the sides, then join them together to cover the walls of the pan. Don't worry about the appearance of the inside, the important thing is to distribute the dough as evenly as possible.
  7. Placing and flavoring plums
  8. Place the plums upright in the dough-lined pan, like soldiers. This way, more fruit will fit.
  9. Mix the brown sugar with the cornstarch and cinnamon well. The starch will bind the juices released by the fruit.
  10. Sprinkle the mixture over the plums to sweeten them and give them a cinnamon flavor.
  11. Mix the softened butter with the flour and vanilla powdered sugar, using your fingers, until the mixture looks like crumbs.
  12. Distribute the crumbs over the plums, trying to place them as evenly as possible.
  13. Place the tray in the oven preheated to 170°C and bake the cake for about an hour.
  14. Let the cake cool completely at room temperature before cutting it.
  15. Refrigerate the cooled cake for a few hours or overnight. This helps it set well, especially if the plums are watery.
  16. Cut the cake after it has cooled and set well, so you can portion it easily.
