- Sea bream 900 gr
- Potatoes 400 gr
- Dried oregano 2 sprigs
- Extra virgin olive oil (EVO) 4 tablespoons

- Black pepper
- To prepare the baked sea bream with potatoes, peel the potatoes and cut them into slices about half a centimeter thick, transfer them to a bowl and season them with extra virgin olive oil, salt, pepper and dried oregano.
- Mix the potato slices with your hands, then arrange them neatly on a baking tray and bake at 200°C for 25 minutes.
- While the potatoes are cooking in the oven, clean the sea bream, cutting off the lateral and ventral fins with scissors. Under water, remove the scales with the back of a knife, finally belly the sea bream.
- Open the belly of the sea bream and remove the intestines, then season the inside of the belly with salt, pepper and a sprig of dried oregano, then make a few cuts on the sides of the fish.
- Finally, arrange the seasoned sea bream on top of the potatoes, drizzle with a little extra virgin olive oil, add more salt, and bake, this time at 220°C (425°F) for 20 minutes. Once the baked sea bream with potatoes is cooked, transfer it and the potatoes to a serving platter.
This recipe can be customized to your tastes. You can add herbs like rosemary, thyme, or sage for a more intense flavor, or you can grate a little lemon zest over the sea bream for a refreshing touch.
